Its 90 MJ/h duckbill burner handles slow-cooking of stocks, soups, and sauces in pots up to 600mm in diameter. The compact freestanding design drops into almost any commercial kitchen layout without complex installation. Supplied with a heavy-duty enamelled cast-iron trivet and full front access to components, it's a low-fuss, reliable workhorse for everyday stock production.
